I usually save out a duller dollar shave club razor I'd usually toss just for de-pilling. Also find it's easier to get a better angle on the pants if I'm wearing them while I do it. So usually one leg on. Turn sideways at an angle so the area with the pilling is on the top of my leg. Probably harder to show though in a video, but it makes a huge difference I think in being able to get closer to the seams to remove the pilling. I haven't used an actual de-piller in years.
